True enough, but the coaming is attached under ideal conditions (easy access, good visibility, not much area to glue so working time is not an issue). So it may just be a more dependable joint then the deck seam (which has poor access, no visibility while being assembled and is usually being assembled under mental pressure by the first time builders).
For experienced builders and chessies you're probably quite right.
