If we play Monday Morning Quarterback, we could say that the best time to remove epoxy gobs is before they cure. I keep a plastic squegee handy while forming fillets for this purpose. Even if the gobs appear later, and you check in on the project a few hours later it should be pretty easy to scrape the still-soft gobs away.
