I think all of the stated techniques are adding more work than is necessary. What I did was drill six 1/8 inch holes through all three layers of the coaming and the deck, and put pieces of 1/8 inch dowels through the holes. This way, you can make sure everything is perfectly lined up, THEN epoxy and clamp the layers with the dowels in place - sand off the dowels when it's cured. I didn't have to sand the spacers at all on the outside and minimally on the inside border because they were perfectly lined up. I also think that the dowels make a nice contrast to the sapele of the coaming, though they are actually barely noticeable.
