An epoxy mixture with too much hardener in it will never cure properly. Depending on the degree of the mismatch between resin and hardener, it might feel like chewing gum. The mix won't reach full strength, and there might be unpleasant side effects such as a greasy film on the surface that paint or varnish won't stick to. I've never seen "brittle" before with bad epoxy, only gummy.
