These boats have been built successfully in all sorts of conditions; high humidity, hot and dry, cold and snowing, etc. Everywhere from climate controlled workshops (I'm fortunate to have one of those!) to bedrooms to garages to rear porches and decks. Bottom line is as long as you keep the thing out of the rain it's gonna work. Temperature will have more effect on the epoxy cure rates than humidity will. Your biggest problem is probably going to be keeping all the dust off the varnish while it dries. No big deal either unless you're a perfectionist like the rest of us here! Enjoy the build.
