I started (and half finished) a canoe with red cedar, and wasn't too happy with it... It splinters and breaks easily. Don't get me wrong... It will work absolutely.
I just checked Gil Gilpatrick's book "Building a Strip Canoe", and he recommends Northern White Cedar. But he also makes plain that you should use what you can get a hold of that's reasonably clear and that you can afford.
