What sort of paddling do you plan to do? Have you rented or borrowed a sea kayak before, and was there anything you liked in particular?

Seats are worth worrying about, although the standard kit seat gets good reviews right out of the box. There are few, if any, items that you can't add later after you've gotten in some miles on the water and have formed opinions on what you like.

DO make sure you have plenty of C-clamps, a good sharp block plane, and if you don't have it already, a copy of the kayak-building DVD.
