Absolutely no reason not to. That's the way I've always done it (except for the LT16 kit I built a while back). You're dead on about the accuracy. In fact, if each half of the boat is a mirror image of the other, you could even loft only one side, stack your wood and cut out both sides at once.

Just make sure that your pencil marks are light enough to erase (and erase them before putting on the epoxy) if you're going to finish bright. Don't ask.
