I don't know how you'd get the hull-to-deck fiberglass reinforcement in there without the hatches. The standard scheme is pretty easy. It's a sticky step but it's over quickly.

I don't think it's ever been tried, but theoretically you could leave the interior 'glass out and add additional 'glass on the exterior to reinforce the hull-to-deck joint. It'd be an expensive experiment, and anyway the hatches are nice for stowing gear. They ARE flush hatches, so at least they are the prettiest possible hatches.
