Fairing the hull

I'm almost ready to begin interior epoxy fillets on my Chesapeake 17, and i've done the winding and straightening on the hull. To me, everything looks good, but I am confused about what i've heard regarding the area in the center between the bulkheads. Some postings advocate cutting the wires and putting more 'V' into the bottom. The bottom looks pretty flat, but seems straight and true, with the panels nicely aligning. Should I just go ahead with filletting, or fuss with it some more?
