Hi Kyle,

What a great idea for your husband--I'm sure he'll love a CLC kit. Being the owner of a Mill Creek 13 which my husband built for me, I recommend the breed highly. My only additional thought is that you probably want to get the Mill Creek 16.5 as it is designed for two people, but can easily be paddled by one (leaving room for a dog!). The MC is also an amazingly stable kayak, which comes in handy if there's a dog involved! It has a great carrying capacity, and is very comfortable. It should be fine for lakes, but be aware that it was NOT designed for truly rough water or open ocean.
