I believe it is because the light is hitting the grain differently. On my daughter's strip-built cradle, this shows up as differences in the hue of the strips. All of the strips came from a single board, and were numbered as I cut them. I then bookmatched the strips. They show up as dark/light/dark/light/dark/light, but each strip is basically the same color as the one next to it.

If you plan for this, you can create very dramatic effects.
