Varnish?

OK, I know that varnish is probably the easiest finish to brush on, giving the most durable finish for the least amount of work...BUT...

What if, say, I had access to a huge paint booth and spray equipment (at work, courtesy of your tax dollars)...would my first choice still be to use varnish? Or should I go with automotive clearcoat or something similar? Also, if I'm spraying "it" on (whether varnish or otherwise), should I still go with 3-5 light coats, or should I spray a couple of heavier coats instead?

CLC -- any input you have would be especially appreciated.
