I went with option 1 and it works fine as long as you do wipe up the excess epoxy. My only caution about doing the spacer without the coaming is that they come in halves and the highest curvature is where the two pieces meet. The coaming serves to make sure that you don't get a "kink" there. You could always use some scap for the same thing
