Matt, I can't find the page right now, but I think it's on the CLC site somewhere. Apparently the satin finish varnish is fine except that it lacks UV protection, so it should be applied over the gloss varnish. I wonder how well that varnish itself will stand up to sunlight, however... You might need an annual re-coat, depending on how often you go paddling.
