No, I haven't. But it would be a cool thing to try.
Splintering: Once its under glass, it isn't going to splinter.
Resin not adhering: If dry bamboo's not high in oils or tannic acid, epoxy should soak in and stick. If it is, some pre-treatment will be necessary. Google "mahogany oil epoxy" and "white oak tannic acid epoxy" for details on standard treatments.
Other: Strip-built needs flat stock. Can you make bamboo stock flat?
