This is exactly what I was thinking. Attach them to a long bar (or set of bars in a big I shape) and use them as a cat. That should tow reasonably well and won't roll easily. The bar(s) would only need to be maybe four or six feet long to have plenty of separation between the yaks. Put a set of roof rack cradles on there, strap the boats in, and let her ride. If you want to minimize any drag, just mount the bar on top of the decks instead of under the hulls.
