In the big picture gluing a paneled deck/hull together with interior tape isn't any harder than bending a one piece deck to a sheerclamped hull with all the associated attachment details(nails,straps,tape), rounding over(plane,sandpaper), hatch details and sealing. Besides with the paneled deck or strip deck you'll have a much easier time making flush hatches.
