There are builders who don't use fillets at all, and use 2" tape instead of 3".

I for one, would go with your lightest mix and make the fillets as small as you can. From what I understand, the fillet is simply to make a smooth transition for the cloth from one panel to the other - no bubbles.

This of course, all depends on what you expect your kayak to endure, and how much you weigh.

LeeG has some excellent thoughts on where to glass the inside of your hull - kinda like putting the weight where it does the most good.
