Jim, I have used spruce on three strippers, two canoes and one kayak. It is easy to work with, both strong and flexible. I used white pine as a supplemental wood on one kayak. I don't think it was as easy to work. Mahogony is too heavy except as trim and doesn't bend well, neither does redwood. Cedar is the standard because it works easily, is light, and looks good.
