That is the plan. But if you have really long legs make sure that your knees clear the bottom corner of the deck beam.

That was the standard answer. If it were my boat I would test paddle the kayak with the coaming off through an undersized cut out cockpit hole in a stiff crosswind to locate the seat (and thus the coaming) to make the kayak wind neutral (no weathercocking i.e. turning into the wind). Moving the seat back reduces weathercocking. My cockpit is 3" aft of plans on my standard sized Ches 17. I like 4 to 5 inches clear between my back and the coaming.
