You can't do that. The epoxy is a chemical reaction between resin and hardener, so it cures whether it's exposed to air or not. The varnish literally...dries, as solvents in the varnish evaporate into the air. If you build up a lot of the varnish, then the underlying coats that aren't dry can't exhaust their solvent so those coats don't dry.

Just do what we do before practically every boatshow...get a quick coat or two on, and add more coats when you get time days or weeks or months later. Most people won't notice...
