That could work, but you would have to take precautions not to glue it to the original deck with the glue that seeps out of the joints. Forms wouldn't be too hard to make, and you can modify those to your liking. Maybe a bit more or less toe room, flatten/drop the back deck etc. After making the forms, take a strip and lay it along the forms in various places to scope out any areas that are not 'fair' and adjust from there.
