When you do get to varishing I highly recommend the yellow foam roller (cut to fit a small roller frame) and a foam brush. Add a little penetrol to the varnish roll it on quick and thin and tip the bubbles out with the foam brush. This technique lets you move quickly and maintain a wet edge. I was amazed at how smoothing it came out (wet sanding between coats)...looks as good as any sprayed job. Everybody has there own little tricks...but all should try this method.
