Wow, Fred! Asking about favorite varnishes is like asking about leaving or removing wire stitches. You will get lots of opinions here, and it might be worthwhile doing a forum search.

I used Captain's for a couple of reasons. CLC recommended it in the CH16 manual, and it was on sale during a visit to West Marine. I had no problem at all with it, applied easily and looked good when it was dry.
