Not with stitch-and-glue boats, no. You're going to see some plywood endgrain one way or the other. Personally, I find the neat exposed endgrain a pleasant contrast stripe.
As a practical matter, you couldn't fiberglass a stitch-and-glue kayak if you left all of the seams sharp-cornered.
