It's just a waste of hardener. The cure method is totally different with epoxy vs polyester. Mix as close to spec as you can.

Now the Gougeouns DO recomend a slight additional hardener for epoxies used for coating water tanks, but that's the only place I ever recall any suggestion of not adhering to the proportions.
