I have often done this, using microballoons in the epoxy to fill the fiberglass more quickly.

As you say, varnishing such a finish would be out of the question. And the microballoon-epoxy mix isn't as strong. How much less I don't know; it may be a question of going from 400% of necessary strength to 360% or something.
