If you were to paddle down this way we insist on sea kayaks having "proper" bulkheads, bulkheads that are a structural part of the hull, bulkheads that can take the strain when the cockpit is full of water. As far as I know just about all wooden kayaks build (and designed) here have wooden bulkheads. Plastic kayaks have plastic bulkheads, often foam.
When I design and build, the bulkhead holds the shape of the hull while being built.
Some designers do it differently.
