Double Ender

I have a question regarding the modification of the Chesapeake kayak design. I would like to build a boat that is symmetrical fore/aft. Is there a point on the boat (preferably at the beam) where the bow design could be repeated for the stern half of the boat? Are there any seaworthiness problems with this? I know a rudder would be out-of-the-question.
