varnishing ?

Good Morning to Everyone

Im getting close to starting the whole varnishing process and was just reading up on it a bit. Just a few concerns before i start. First do i really sand the whole boat with 80 then 120 then 220 grit sandpaper?? Do i really do this, the boat looks so nice i feel horrified to take the orbit sander to it. Im also worried about accidently sanding into the fiberglass...if i do will it be a huge disaster. I would be grateful for any suggestions or warnings on how to do this. Wish everyone a great week!
