Alvin,

The 18 will hold more cargo for sure, and when loaded, will be stable. (I've looked at your lovely photos and you're not a very big fellow). If you were in the 18 without cargo, you may find yourself bobbing around too much on the surface of the water - in which case you would be less stable and very prone to wind and weathercocking.

If cargo is an issue - think of the well-proven flagship of the Chesapeake line, the CH17. It holds a ton of stuff, and is more your size.

These kayaks all hold more weight than you'd initially think.
