either works...my preference would be wax paper because it is a bit stiffer than plastic wrap...so it is easier to work with and inspect your joints from the edge.
as you do this step (making a stack) it is really useful to make some kind of alignment marks somewhere outside of of the area where you will be applying the weight that you can easily see that you have stacked the panels exactly where you wanted them. so rehearse the step all the way to putting the weight on it so you will know how it all is supposed to go.
