A quick comment on the "waterproofness" of okume: the glue may be waterproof, but the wood itself will rot if left wet long enough.
Also, many builders of larger boats use regular old home center plywood. Works, if you sheath it well. Only downside is weight, and if you were looking for an ultra lite boat, you wouldn't be building the Mill Creek.
