If there aren't any gaps on the outside, why, there's no need to fill any gaps.

All plywood stitch-and-glue boats are going to reveal some veneer and glue lines when the chines are rounded prior to 'glassing. Beveling the edges of panels where they meet will reduce the reveal some, but you can't round off a plywood corner.

I agree with the other posters; I think the effect is nearly unnoticeable in any case and if you keep the round-over even, it can be pleasant to look at.
