if you recoat

while the epoxy is still "green" you don't need to sand at all. By green I mean somewhat soft to the touch, but just past the sticky part. I NEVER touch epoxy with sandpaper till I've gotten all the fill coats rolled on.
Once you get all those on, then 120 should be fine to start with, depending on whether you're gonna paint or go bright. If bright, then follow the 120 with finer and finer, up to and including at least 320
