Mill Creek Hull Repair

A while ago I ran into an oyster reef in Galveston Bay (Texas). This resulted in many gouges in the hull which I then filled with epoxy. Time passed and now it is time to sand and repaint. I purchased some Brightside Polyurethene (as well as some brushing liquid 333) and my orbital sander is ready to go! Would someone please advise grits and application (I'm planning on using a roller) as well as what boundaries of humidity should I attempt to stay in?
