You want to keep the boat evenly across the truck to avoid unpleasant breakage. The foam blocks I have on my car allow me to snuggle teh kayak in tightly while allowing excellent cushioning. I think I have only about 3' width between teh bars and I have never had a problem with damage to the hull. If you tie the boat down enough that when you grab the stern or bow and shake it and the whole vehicle moves, then you have your ideal tension. That was how it was explained to me by some very experienced paddlers and that is how I judge whether I have enough tension or not.
