All good advice above. I would just add that you should avoid using too much epoxy, as that just adds weight. You want the fiberglass weave filled, not more. Sand her down to that level (carefully avoiding sanding into the fiberglass), then do a final very thin coat to fill the low points. Sounds like you are doing just fine, with the normal problems.
