I think I could sand several kayaks with 30 of the 80 grit disks. A shop vac hooked to your sander will help the disks last longer sinced they won't clog up. You might also try wet sanding. All you need to do prior to the last coat is wash the boat with clean water. Rinse well and dry with paper towels. You can vac the boat off with a brush attachment before washing too. NO tack rags or solvents of any kind!

Once the last coat is on just wet sand it. 320 or 400 to knock the gloss off is all you need.

I am not a fan of the high build primers. They contain talc which attracts moisture. Not a good thing on a boat. Just go right over the sanded epoxy with your paint. Afterall you don't need primer for varnish either. If you want to use primer then use a standard, not high build version.
