One thing I do before stitching, is to sand a slight bevel on the inside edges where the planks will meet when stitched. This helps them align better. And, yes there will be a valley created on the outside of the seam. This gets filled after all the taping is completed and the stitches are removed with woodflour thickened epoxy.
