With stitch and glue symmetry is much more important than absolute dimensions. Because of that, if I was doing that kind of adjustment I'd take the boat apart, clamp the panels together and then plane, carve, etc. That way the left and right sides are going to match up no matter what.

Also, to help eliminate some time during the unstitch/restitch process and to prevent over tightening, leave out every other stitch except in high stress areas. In most parts of the CLC boats the recommended stitch spacing is at least double what you need. I've still got over 1/2 the wire that came with my wife's 16LT kit.
