I'd avoid the spray foam. There were several posts on this topic a few weeks back. Foam is bad, for a variety of reasons.
I do use the wine bladders. They're not as puncture-resistant as the float bags, but they work and are light and cheap (we'll, you have to drink the wine first, which is an additional argument for using them). I also use one and two- gallon juice jugs - more puncture resistant, and they can be wired in place.
I think most folks with hatched compartments on their boats skip the backup floatation. Cheap insurance, I say.
