If you could find a way around the space problem - the chesapeake double is a GREAT boat. I finished mine last summer, and its so much fun to paddle. With the amount of work you were about to spend cannibalizing the NB, you could do most of the work on the double. Mine took me 8 months of my spare time to complete, but its surprising how eventually, it does get done. (Once the wood is sitting there staring at you anyway).

The double is a lot of fun to paddle...when bringing the wife, you'll like it a lot more than having 2 boats. No keep-up-with-me factor. The double is a very stable boat too - great to bring a beginner out in.
