Depends how much twist and bend over how much length you're talking about. I've used ash in furniture building and well as boat building and it will bend quite a bit, if you're patient with the clamps. That being said, 3/4" square stock is on the stiff side for short bends, which is probably what you'll need to do at the ends of the canoe.

One of the professional builders on this forum may have more data on exactly when you should revert to the steambox. Also, Wodden Boat Magazine had a article on steamboxes some time back, as does that site for building those ultralight skin-on-frame boats (can't recall the site name, but one of the others will know).
