On large and small boats we use fairing boards for most rounded edges. You "roll" the board from one flat surface to the other flat surface. This produces a nice even round because of the length of the board. I would hesitate to use sanders on edge areas. Use the board to shape before glassing then all other steps with reduced grit sandpaper.
