I have built a few boats. I have always used the five-gallon-bucket method. In leau of cleanup, I mask the edges of the scarfe, on both sides of the panels, with plastick packing tape-a tip I got in this forum. Squeeze out is so thin that it comes off with the tape. There shouldn't be much squeeze out, but a little lets you know the joint is not starved.

I mask all my panel joints with plastic tape prior to filleting. Let the epoxy set up a little before applying tape and it makes for very pretty fillets. I am not a big fan of weight sving when it means not having rigid chines!
