I'll second the foredeck issue---probably impossible---and add that I worry about the bottom panels forming up right in 6mm. Part of what makes the Chesapeake 16 pretty is the near-90-degree twist of the bottom panels up into that fine underbody at the bow.
6mm marine plywood isn't just 33% thicker than 4mm; it's got another two veneers and all the associated glue in it to make it even stiffer.
