You may certainly paint the boat if you like; many do. Specifically to your question, the paint is the last thing that goes on. Because the epoxy and fiberglass sheathing on the boat is clear, the wood-grained look persists almost to the end of the project, at which you either varnish to preserve and enhance the look or paint the hull for a sleeker, post-modern appearance.
