1st f glass experience

Our first fiber glassing experience (other than taping the fillets)was in the cockpit.
Doing it with one piece and wetting out from the middle was difficult.
What we ended up with is another reason why my boat is over ten pounds heavier than Craig's.
We did stick to one piece of fiber glass for boats two and three, but wouldn't cutting the glass into three pieces have been much easier and just as good?
Would it make sense to let an initial coat of unthickened epoxy dry enough to be untacky before laying the fiber glass in, thus not have to deal with the extra variable of the wood absorbing epoxy?
